TRY SUMMA DIS GUAVA DUFF - DA REAL BAHAMIAN TING!

Guava duff has been a Bahamian favourite since ...
before even Granny and Fleabag can remember! It is
a steamed pudding with a delicious sauce, and it
can also be filled with coconut or another favourite
fruit.

  • 4 cups flour

  • 1/2 cup sugar

  • 4 teaspoon baking powder

  • 1/2 cups butter

  • 2 egg yolks

FILLING:
  • guava shells

  • sugar and nutmeg to taste

SAUCE:
  • 2 egg whites

  • 1 cup sugar

  • 3/4 cup unsalted butter

  • coconut rum


Cream butter and sugar. Add egg yolks and beat
until fluffy. Blend in flour. Add milk until
dough consistency, and a dash of nutmeg.

Roll out dough. Spread guava filling. Roll up
like a jelly roll and seal edges. Place in oven
bag. Boil in tightly covered pot for about
1 1/2 hours (or roll in foil and bake in a pan
of water).

FOR SAUCE:
Beat egg whites until fluffy. Gradually add one
cup of sugar and beat until stiff peaks form. Stir
in 3/4 cup of unsalted butter. Add coconut rum to
taste. You can also add some strained pulp from the
guava for colour and flavour.

Slice duff and serve warm with sauce on top. ENJOY!
